Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 large head of cauliflower chopped
  • 3 tbsp taco seasoning (or preferred taco seasoning blend)
  • cup water
  • Flour or corn tortillas

Optional Veggie Add-Ins

  • 1 red or yellow pepper thinly sliced
  • ½ red onion thinly sliced

Optional Dressings

  • Vegan Chipotle Crema (pictured) recipe coming soon
  • Vegan Sour Cream
  • Hot Sauce
  • Avocado sliced

Instructions
 

  • Preheat a skillet over medium heat and then add the oil. Once warmed add in the cauliflower along with any vegetable add-ins. Sautee until softened, about 5 minutes.
  • Now, carefully stir in the spices and water to the skillet with the veggies. Continue cooking over medium heat, stirring occasionally, another 3-5 minutes until the liquid is absorbed and the veggies are lightly browned.
  • Remove from heat and spoon onto tortillas. Dress tortillas as desired and enjoy.

Notes

Picky Eaters? Many kids who are hesitant about vegetables are best served this without too many vegetable add-ins to start. Feel free to mix and match veggies to suit your kids’ taste preferences.
Dress It Up Pair these tacos with some vegan sour cream for picky eaters or dress with some taco or hot sauces. You can also change up the flavour of the cauliflower by cooking it along with a few tbsp of vegan sub sauce, if desired. 
Corn Tortillas If using corn tortillas, while cooking the veggies, I highly recommend heating each tortilla side over a cast iron pan  until softened and lightly golden browned. This helps them stay more pliable and further brings out the flavours.
