Easy Cauliflower Tacos
Ingredients
- 1 tbsp olive oil extra virgin
- 1 large head of cauliflower chopped
- 3 tbsp taco seasoning (or preferred taco seasoning blend)
- ⅓ cup water
- Flour or corn tortillas
Optional Veggie Add-Ins
- 1 red or yellow pepper thinly sliced
- ½ red onion thinly sliced

Instructions
- Preheat a skillet over medium heat and then add the oil. Once warmed add in the cauliflower along with any vegetable add-ins. Sautee until softened, about 5 minutes.
- Now, carefully stir in the spices and water to the skillet with the veggies. Continue cooking over medium heat, stirring occasionally, another 3-5 minutes until the liquid is absorbed and the veggies are lightly browned.
- Remove from heat and spoon onto tortillas. Dress tortillas as desired and enjoy.
