If you’ve been on the hunt for a vegan toddler breakfast that’s quick, healthy, and 100% kid-approved, let me introduce you to a household favourite: Green Magic Pancakes. These little beauties are packed with goodness—hiding three cups of leafy greens inside—yet they taste so neutral and comforting that even the pickiest eaters will happily gobble them up.

The best part? Not only do they qualify as a whole food, planted based (WFPB) breakfast option, but they also come together in minutes. Just toss the ingredients into a blender, pour the batter onto a hot griddle, and breakfast is served! Whether you stack them high with a drizzle of maple syrup or make mini pancakes as easy grab-and-go school snacks, these are as versatile as they are wholesome.

And trust me, they pass the toughest critics. My 14-month-old ate five of these in one sitting, and even my super picky 4-year-old cleans her plate when these are on the table. In fact, she begs me to make them. For a recipe that sneaks in veggies without any fuss (or toddler side-eye), it doesn’t get much better.

So, if you’re looking for an easy vegan pancake recipe that doubles as a hidden veggie hack for picky kids, these Green Magic Pancakes are about to become a staple in your kitchen. 🌿✨

Ingredients

  • 2 tbsp flax ground
  • 5 tbsp water
  • 2 cups rolled oats
  • ¼ cup hemp seeds
  • 2 bananas very ripe
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • cups soy milk
  • 3 cups spinach packed

Instructions

  • In a small bowl, mixing the water and ground flax together. Let sit.
  • Meanwhile, add the rolled oats to a blender and blend into a flour.
  • Now, add all of the remaining ingredients EXCEPT the flax mixture and the spinach into a blender. Blend until smooth.
  • Add in the flax mixture and the spinach. Blend until just smooth and let sit while you pre-heat your griddle or pan. The batter will thicken a bit as it sits.
  • Once the griddle is heated, grease as needed and pour the batter into pancakes. Let cook until bubbly and firming up on the sides. Once golden brown, flip and cook the other side.
  • Serve and enjoy! We recommend a drizzle of syrup to sweeten these up.

Notes

Bananas The bananas give the sweetness to this recipe, so you want to have your bananas as ripe as possible.
Flour If you are concerned that your blender cannot properly grind oats into a flour, you can either use pre-made oat flour or sub out to the flour of your choice, however, be aware that you may need to adjust the liquid volume needed with any substitutions.
