Green Magic Pancakes

Ingredients
- 2 tbsp flax ground
- 5 tbsp water
- 2 cups rolled oats
- ¼ cup hemp seeds
- 2 bananas very ripe
- 2 tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon
- 1¾ cups soy milk
- 3 cups spinach packed
Instructions
- In a small bowl, mixing the water and ground flax together. Let sit.
- Meanwhile, add the rolled oats to a blender and blend into a flour.
- Now, add all of the remaining ingredients EXCEPT the flax mixture and the spinach into a blender. Blend until smooth.
- Add in the flax mixture and the spinach. Blend until just smooth and let sit while you pre-heat your griddle or pan. The batter will thicken a bit as it sits.
- Once the griddle is heated, grease as needed and pour the batter into pancakes. Let cook until bubbly and firming up on the sides. Once golden brown, flip and cook the other side.
- Serve and enjoy! We recommend a drizzle of syrup to sweeten these up.
