Easy Cucumber and Tomato Sandwich
Ingredients
- 2 slices hearty bread toasted (I love Silver Hills Sprouted Power)
- 1-2 tbsp vegan mayo (or sub for mashed avocado)
- ½ cucumber thinly sliced
- ½ ripe tomato thinly sliced
- onion slices (to taste)
Optional
- lettuce shredded
- sprouts
- fresh herbs
- seasoning
Instructions
- Spread mayo or avocado on one side of a bread slice.
- To the other slice of bread: layer cucumber, tomato, and onion.
- Add lettuce, sprouts, herbs or seasonings if desired.
- Top with the mayo covered bread and slice in half. Serve and enjoy!
