Going dairy-free came with a few obvious heartbreaks.

Cheese, of course. That was the first one.

But the second? The one that genuinely caught me off guard?

That iconic red tub of Helluva Good Onion Dip.

If you know, you know.

There’s something about walking past it in the grocery store — that bold red packaging, the promise of creamy, salty, oniony perfection — that hits differently when you can’t have it anymore. Every time I passed it in the refrigerated aisle, it felt like it was calling my name.

I tried a few recipes for vegan onion dips over the years. Some were fine. Some were… not. But none of them had that flavour. That unmistakable, rich, savoury French onion taste. And almost all of them were missing the creaminess I was craving.

They were either too tangy, too thin, too bland, or trying too hard to be “healthy.”

In this case, I didn’t necessarily want healthy.

I wanted Helluva Good.

So I made it.

This dip is everything you remember — rich, creamy, deeply onion-forward, and completely scoopable — just made without dairy.

It’s the kind of dip that makes wavy potato chips feel like a vehicle for something greater.

It has completely satisfied my late-night snack cravings. And I don’t say that lightly.


What Makes This Copycat So Good?

The secret is balance.

Traditional French onion dip relies heavily on sour cream for body and tang. To replicate that without dairy, we need two things:

  1. Ultra-creamy texture
  2. That classic savory depth

This recipe achieves that with a blend of soaked cashews (for richness and body) and vegan mayonnaise (for that familiar dip flavour). The cashews create a smooth, neutral base that mimics dairy beautifully. The mayo brings the nostalgic element home.

And then there’s the onion.

Not just chopped and stirred in, but properly caramelized.

Twenty minutes in a pan with olive oil transforms a sweet onion into something deeply golden, slightly sweet, and intensely savoury. That’s where the real magic happens. That’s what gives this dip its authentic French onion flavour.

Ingredients

  • 1 tbsp olive oil
  • 1 sweet onion, finely diced
  • 1 cup cashews, soaked in boiling water for 3 minutes and drained
  • ½ cup water
  • 1 tbsp lemon juice
  • ¾ tsp apple cider vinegar
  • ⅛ tsp salt
  • ½ cup vegan mayonnaise
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • 2 tbsp parsley flakes

How to Make This Vegan French Onion Dip

Step 1: Caramelize the Onion

Heat olive oil in a frying pan over medium heat. Add the finely diced sweet onion and cook, stirring occasionally, until deeply caramelized — about 20 minutes.

Don’t rush this step. This is where the flavour builds.

You’re looking for soft, golden brown onions with a slightly jammy texture.

Step 2: Blend the Creamy Base

While the onions cook, add soaked cashews, water, lemon juice, apple cider vinegar, and ⅛ tsp salt to a high-speed blender.

Blend on high for about 1 minute until completely smooth and creamy.

The texture should be silky, not gritty.

Step 3: Bring It Together

Transfer the cashew cream to a mixing bowl. Stir in the vegan mayonnaise, garlic powder, onion powder, salt, and parsley flakes.

Once the onions are finished cooking and slightly cooled, fold them into the mixture.

Step 4: Chill (Important!)

Cover and refrigerate for at least 4 hours.

Overnight is even better.

The dip thickens as it chills, and the flavours deepen beautifully.


How to Serve It

Let’s be honest, this dip was born for wavy potato chips.

The ridges hold the creamy dip perfectly, and the saltiness balances the rich onion flavour.

But it’s also amazing with:

Ingredients
  

  • 1 tbsp olive oil
  • 1 sweet onion finely diced
  • 1 cup cashews soaked in boiling water for 3 minutes to soften, then drained *See Nut Free variation in Notes
  • ½ cup water
  • 1 tbsp lemon juice
  • ¾ tsp apple cider vinegar
  • tsp salt
  • ½ cup vegan mayonnaise
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • 2 tbsp parsley flakes

Instructions
 

  • Add the tbsp of olive oil to a preheated frying pan. Once warmed, add in the diced sweet onion. Cook, stirring occasionally, until caramelized. Approximately 20 minutes.
  • Meanwhile, to a high speed blender, add the soaked (and drained) cashews, 1/2 cup of water, lemon juice, apple cider vinegar and ⅛ tsp salt. Blend on high until creamy and smooth, about 1 minute.
  • Add the contents of the blender to a small mixing bowl. Stir in the vegan mayonnaise, garlic powder, onion powder, salt and parsley. Once the onion is finished cooking, stir it into the mixing bowl too.
  • Cover and chill in the fridge, ideally 4+ hours before serving. It will thicken slightly as it sits. The onions impart more sweetness to the dip the longer it sits. Enjoy!

Notes

Nut Free?
Omit the cashews, water, lemon juice, apple cider vinegar and 1/8 tsp of salt (anything that goes in the blender). Instead, mix in 3/4 cup of your favourite nut free dairy free sour cream to your mixing bowl. I recommend using one that doesn’t taste coconut-y, such as Tofutti Sour Cream. Just always double check the ingredients for allergens.
