If you’ve been following along for a while, you’ve probably noticed I’ve shared quite a few treats lately. While I absolutely love indulging and recreating classic comfort foods, we definitely don’t live on cookies and milkshakes! Most weeknights, I’m reaching for meals that are simple to prepare, nourishing, and satisfying enough to keep everyone full until bedtime.
This Creamy Lemon Quinoa Power Bowl has quickly become one of those recipes I know I’ll make again and again. It’s packed with fresh vegetables, fluffy quinoa, golden pan-fried tofu, and tossed in a creamy lemon hummus dressing that brings everything together with just the right amount of brightness. The result is a healthy vegan power bowl that’s hearty enough for dinner but still tastes light and fresh- perfect for the warmer months!
One of the things I love most about this recipe is how nutritious it is without feeling like “health food.” Quinoa is one of the few plant foods considered a complete protein, meaning it contains all nine essential amino acids. It’s also a great source of fibre, magnesium, and iron, making it an excellent base for a filling meal. Pair it with protein-rich tofu, which also provides calcium and iron, and you’ve got a balanced meal that’s both satisfying and energizing.
Another reason this healthy quinoa power bowl has earned a spot in our regular meal rotation is how adaptable it is. I usually sauté peppers and onions with the tofu, then add a generous handful of mixed greens, but you can easily swap in whatever vegetables you have on hand. Cherry tomatoes, cucumbers, shredded carrots, radishes, sprouts, or avocado would all be delicious additions.
This recipe is also fantastic for meal prep. If you’re packing it for lunches, simply store the creamy lemon dressing separately and toss everything together just before eating. It keeps the greens crisp and fresh, making it feel like you’ve just prepared it. It’s one of those lunches you’ll actually look forward to all morning.

Creamy Lemon Quinoa Power Bowl
Ingredients
Main Power Bowl
- ½ cup quinoa (dry)
- 1 tbsp olive oil
- 1 350g block extra firm tofu pressed and patted dry, cubed
- 1 tsp lemon pepper seasoning
- 1 red pepper chopped
- ½ sweet onion chopped
- 2 cups salad greens finely chopped (I like mixes with spinach, baby kale, radish, etc.)
Dressing
- 1 lemon juiced (about 3 tbsp)
- 2 tbsp olive oil
- ½ cup hummus
- 2 tsp dried dill
- ¼ tsp salt
- ¼ tsp ground black pepper
Instructions
- Cook your quinoa according to the package directions. I just use my instant pot and add the quinoa with ⅔ cups water and then cook for 2 minutes and let the pressure release naturally. While the quinoa cooks, I prepare the rest of the dish.
- To a preheated non stick or cast iron pan on medium heat, add your olive oil and let it warm. Once warmed, add in the cubed tofu and sprinkle on the lemon pepper seasoning. Cook, flipping the tofu every few minutes to brown each side. Once the tofu is lightly golden, toss in your chopped pepper and onion. Continue cooking to soften.
- Meanwhile, prepare the dressing by thoroughly whisking all Dressing ingredients together in a bowl.
- To a large mixing bowl, add the cooked quinoa, cooked tofu and veggies and chopped salad green. Toss to mix everything together and then drizzle on the dressing. Gently mix to incorporate and serve into bowls. Enjoy!
