Fresh, creamy and packed with protein, this healthy quinoa power bowl is perfect for weeknight meals. It's quick to prepare and comes together with basic ingredients.
2cupssalad greensfinely chopped (I like mixes with spinach, baby kale, radish, etc.)
Dressing
1lemonjuiced (about 3 tbsp)
2tbspolive oil
½cuphummus
2tspdried dill
¼tspsalt
¼tspground black pepper
Instructions
Cook your quinoa according to the package directions. I just use my instant pot and add the quinoa with ⅔ cups water and then cook for 2 minutes and let the pressure release naturally. While the quinoa cooks, I prepare the rest of the dish.
To a preheated non stick or cast iron pan on medium heat, add your olive oil and let it warm. Once warmed, add in the cubed tofu and sprinkle on the lemon pepper seasoning. Cook, flipping the tofu every few minutes to brown each side. Once the tofu is lightly golden, toss in your chopped pepper and onion. Continue cooking to soften.
Meanwhile, prepare the dressing by thoroughly whisking all Dressing ingredients together in a bowl.
To a large mixing bowl, add the cooked quinoa, cooked tofu and veggies and chopped salad green. Toss to mix everything together and then drizzle on the dressing. Gently mix to incorporate and serve into bowls. Enjoy!

Making this ahead? Keep the dressing separate and add once ready to serve.Get creative with the vegetables! I like cooking in the onion and pepper, but this power bowl is also tasty with fresh cherry tomatoes, cucumbers, sprouts, radishes and more. Adapt to your tastes.
