Super Simple and Fast- Chocolate Quinoa for Breakfast
Equipment
- Instant Pot or other pressure cooker
Ingredients
- 2 cups quinoa uncooked
- 2½ cup soy milk
- 1 15 oz can coconut milk
- ¼ cup cocoa powder
- ¼ tsp salt
- 5 tbsp maple syrup
- 1 tsp vanilla extract
Optional Topping Ideas (pick your flavours- we usually dress it simply with sliced bananas and coconut flakes)
- 1 tbsp peanut butter stirred in to each serving
- bananas sliced
- coconut flakes
- raspberries
- blueberries
- strawberries sliced
- nuts chopped
- vegan chocolate chips
Instructions
- Add all ingredients (except your optional toppings) into the Instant Pot. Stir to combine. Set the Instant Pot to pressure cook for 2 minutes. Let the pressure release naturally.
- After cooking is complete, stir everything up again and scoop into serving bowls. Top as desired.
