If you’ve spent any amount of time browsing recipes here on The Gentle Table, you’ve probably noticed a recurring theme: I’m always on the hunt for school snacks that my daughter will actually eat.

Like many parents, I’ve packed plenty of healthy snacks with the best intentions, only to find them untouched at the bottom of a lunch bag later that day. Finding that balance between nutritious and kid-approved can feel like a full-time job. These apple granola bars were created during one of those snack experiments, and thankfully, this one was a success.

They’re soft, lightly sweet, and packed with cozy apple pie flavours. The texture is one of my favourite things about them. While many homemade granola bars can be quite firm or crunchy, these stay soft and chewy, which seems to be exactly what younger kids prefer.

The sweetness level is intentionally moderate. They’re sweet enough to be enjoyable but not so sweet that they feel more like dessert than a snack. If your family has a particularly strong sweet tooth, you can easily increase the brown sugar slightly to make them a little more indulgent.

These bars have also become one of my favourite make-ahead snacks. I often bake a double batch, slice them into bars, and freeze them individually. On busy school mornings, I can simply grab one from the freezer and tuck it into a lunch bag. By lunchtime, it’s perfectly thawed and ready to eat.

Ingredients
  

  • 1 tbsp ground flax
  • 3 tbsp water
  • 1¼ cup oat flour
  • 2 cups rolled oats
  • 1½ teaspoons cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground cloves
  • ½ teaspoon baking powder
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • walnuts *optional chopped (omit for nut free)
  • 1 cup non-dairy milk
  • 6 tbsp pure maple syrup
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla
  • 2 apples peeled and grated

Instructions
 

  • Preheat oven to 350℉.
  • Mix flax and water in bowl. Set aside.
  • To a large bowl, whisk the oat flour, rolled oats, cinnamon, nutmeg, clove, baking powder, sugar and salt together well.
  • Add the milk, syrup, coconut oil, vanilla to a medium bowl, stir to combine and then gently stir in flax mixture.
  • Gently combine wet mixture to the dry and fold in the apples and walnuts (if using).
  • Add to a parchment lined 9×13 pan and press down. Bake for approx 30-35 minutes. Edges should be golden brown.

Notes

A note on walnuts: If you are making this for a school lunch, be aware that most schools are nut free. Please omit for these instances.
