I am always looking for nutritious, quick breakfast ideas that I can make ahead and have easy meals to grab during the work week. While I often batch cook and freeze healthy waffles, I do like to mix it up too. And while some may think of oatmeal as a rather bland breakfast, it doesn’t have to be!

This Easy Baked Apple Oatmeal is the perfect cozy breakfast for fall and winter. It’s warm, comforting, lightly spiced, and smells absolutely heavenly while it bakes. Best of all, it can be made ahead and batch cooked so you have wholesome, satisfying breakfasts ready to go for the week ahead.

For everyday breakfasts, I usually enjoy it just as it is. When I want something a little extra, I’ll add chopped nuts, seeds, or a drizzle of additional maple syrup. And if you’re serving it for brunch or a holiday morning, a sprinkle of brown sugar and a swirl of coconut whipped cream turns it into something a bit more indulgent.

Easy Baked Apple Oatmeal

A cozy, make-ahead baked oatmeal filled with tender apples and warming spices. Gently sweetened with maple syrup and packed with fibre and plant-based protein, this vegan breakfast is perfect for busy mornings or relaxed weekend brunches.

Ingredients
  

  • 2 tbsp ground flax
  • 6 tbsp water
  • 2 cups rolled oats
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • ¼ cup hemp seeds
  • 1 tsp baking powder
  • 1 ½ cups soy milk or milk alternative of choice
  • ½ cup maple syrup
  • 2 tsp vanilla extract
  • 3 apples peeled and diced

Instructions
 

  • Preheat the oven to 375℉.
  • To a small bowl, mix together the ground flax and water. Let sit to thicken while you prepare the remaining ingredients.
  • To a large bowl, whisk together the oats, cinnamon, nutmeg, allspice, salt, hemp seeds and baking powder until well combined.
  • In a medium bowl, stir together the soy milk, maple syrup and vanilla and then gently mix in the flax/water mixture from earlier.
  • Pour the liquid ingredients into the mixing bowl with the dry ingredients and gently stir to combine. Fold in the diced apples.
  • Pour the oatmeal into a 2l casserole dish and bake for about 40 minutes, until the oatmeal is set and no longer liquid-y. This oatmeal can be served warm or cold and topped as desired, or left on its own..it's delicious either way!

Notes

Make Ahead Oatmeal This oatmeal can be made a day or two ahead and baked the day of, if desired. Simply prepare as directed and then pop the casserole dish in the oven the day of. 
Storage Leftover oatmeal can be cooled and stored in an airtight container for about 5-7 days.
