And as it turns out, the answer was already sitting in my pantry: dates.

Wholesome Vegan Waffles with a Hint of Caramel Sweetness
Ingredients
- 1 ½ cups soy milk
- 1 tbsp apple cider vinegar (or lemon juice)
- 2 cups rolled oats
- 1 tbsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup dates (approximately 9 deglet dates)
- 2 tbsp date syrup (recommended- or sub maple syrup)
Instructions
- Preheat your waffle iron.
- Mix the soy milk and apple cider vinegar together in a large measuring cup or bowl. Let sit to begin to curdle while you move to the next step.
- Add the oats to a blender. Blend to make a flour.
- Now add all of the remaining ingredients into the blender (including the soy milk mixture) and blend until smooth. You should just have small flecks of date visible- no large chunks.
- Pour your batter into your waffle iron and cook until browned, usually about 5 minutes.
- Enjoy hot. These are tasty on their own for a quick snack or enjoy with syrup for a sweet, yet nourishing breakfast.
