These naturally sweetened waffles are everything you want in a comforting breakfast. They're crisp on the outside, soft on the inside, and filled with nourishing ingredients that make mornings feel a little extra special.Made with oats, soy milk, and a touch of date syrup for that perfect hint of caramel, these waffles come together in minutes and are completely free of refined sugars. They’re wholesome enough for everyday breakfasts yet feel indulgent enough for slow weekend mornings.Perfect for picky eaters and busy families alike, these waffles hold up beautifully as a “grab and go” snack or topped with fresh fruit, vegan yogurt, or a drizzle of extra date syrup.
Mix the soy milk and apple cider vinegar together in a large measuring cup or bowl. Let sit to begin to curdle while you move to the next step.
Add the oats to a blender. Blend to make a flour.
Now add all of the remaining ingredients into the blender (including the soy milk mixture) and blend until smooth. You should just have small flecks of date visible- no large chunks.
Pour your batter into your waffle iron and cook until browned, usually about 5 minutes.
Enjoy hot. These are tasty on their own for a quick snack or enjoy with syrup for a sweet, yet nourishing breakfast.
