How to Make a Delicious Tofu Scramble

If you had told me a few years ago that I’d be regularly making tofu scramble for breakfast, I probably wouldn’t have believed you. To be completely honest, I used to really dislike tofu. No matter how many times I tried it, I just couldn’t understand the appeal. Thankfully, my husband was much more persistent than I was. As he started cooking with tofu more often, I slowly realized that tofu itself wasn’t the problem—it was all about how it was prepared. When seasoned properly and paired with the right ingredients, it can be incredibly satisfying.

This Easy Tofu Scramble is the recipe that completely changed my mind.

One of my favourite things about this scramble is the texture. I prefer smaller bites of tofu, so I finely crumble it directly into the skillet. The result is surprisingly similar to scrambled eggs, making it a fantastic option whether you’re vegan, trying to eat more plant-based meals, or simply looking for a budget-friendly source of protein.

What I love most, though, is how versatile it is. While it’s perfectly delicious served on its own, I often use it as the foundation for other meals. It’s the filling in my breakfast burritos and the star topping for my Loaded Potato Waffles (a recipe I’ll be sharing very soon!). Having a batch ready to go in the fridge makes it easy to throw together a quick, satisfying meal any time of day.

The seasoning in this version is intentionally simple because it’s the way my kids enjoy it most. That said, don’t be afraid to make it your own. A pinch of smoked paprika adds a subtle smoky depth that works beautifully, and black beans are a great addition if you’re looking to boost the protein even further. We also love adding vegan sausage for a heartier scramble. Field Roast’s Apple & Sage variety is a particular favourite in our house, adding a rich, savoury flavour that pairs perfectly with the tofu.

Whether you’re already a tofu fan or still a little skeptical like I once was, this recipe is a great place to start. It’s simple, filling, packed with protein, and endlessly adaptable to whatever you have on hand.

Easy Tofu Scramble

Simple, yet satisfying. This scramble delivers a good protein punch and is so versatile. Eat on its own, stuff into burritos, or top some delicious potato waffles and you have a hearty meal.

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 sweet onion chopped
  • 1 bell pepper chopped
  • 1 clove garlic minced
  • 1 350g block of firm tofu
  • 3 tbsp nutritional yeast
  • ½ tsp salt
  • ¼ tsp turmeric
  • ¼ tsp garlic powder
  • 2 tbsp unsweetened soy milk or other non-dairy milk
  • 2 tbsp maple syrup
  • handful chopped spinach
  • vegan sausage of choice *optional. I usually chop 2-3 to throw into my scramble, depending on the size of the sausage variety we're using. Field Roast Apple & Sage sausages are deep and savoury or Gardein Maple Breakfast sausages add a touch more sweet.

Instructions
 

  • Add the oil to a pre-heated non-stick or cast iron pan. Once warm, add in the vegan sausage (if using), onion, peppers and garlic. Sautee a few minutes until softened.
  • Next, crumble the tofu in the pan with your hands or using a potato masher (if safe to do so in your pan). Stir to incorporate the tofu with the veggies and continue cooking for a few more minutes until the water is cooked off.
  • Now add the nutritional yeast, salt and other spices. Cook and stir continuously until the tofu begins to turn the slightest brown. Then pour in the soy milk and maple syrup and stir.
  • Once incorporated, add the chopped spinach and stir just until wilted. Remove from heat and serve as desired.
