Simple, yet satisfying. This scramble delivers a good protein punch and is so versatile. Eat on its own, stuff into burritos, or top some delicious potato waffles and you have a hearty meal.
vegan sausage of choice*optional. I usually chop 2-3 to throw into my scramble, depending on the size of the sausage variety we're using. Field Roast Apple & Sage sausages are deep and savoury or Gardein Maple Breakfast sausages add a touch more sweet.
Instructions
Add the oil to a pre-heated non-stick or cast iron pan. Once warm, add in the vegan sausage (if using), onion, peppers and garlic. Sautee a few minutes until softened.
Next, crumble the tofu in the pan with your hands or using a potato masher (if safe to do so in your pan). Stir to incorporate the tofu with the veggies and continue cooking for a few more minutes until the water is cooked off.
Now add the nutritional yeast, salt and other spices. Cook and stir continuously until the tofu begins to turn the slightest brown. Then pour in the soy milk and maple syrup and stir.
Once incorporated, add the chopped spinach and stir just until wilted. Remove from heat and serve as desired.
