Getting Creative with Food Scraps: Easy Ways to Cut Food Waste

One of the easiest ways to reduce food waste (and save money in the process) is to get a little creative with what we often think of as “scraps.” Those veggie stems, overripe bananas, and stale bread don’t have to go in the compost — they can become the start of your next delicious meal. With a little imagination, you’ll be surprised by how much flavor and nutrition you can squeeze out of what you already have.


🥕 Veggie Scraps → Homemade Broth

Carrot peels, onion ends, celery leaves, and mushroom stems might not look like much on their own, but simmer them together and you’ve got a rich, homemade veggie broth. Freeze scraps in a bag until you have enough, then boil with water, your favourite herbs, and a pinch of salt. Plus if you’re not going to use it right away, veggie broth can be frozen! Homemade veggie broth is perfect for soups, stews, or cooking grains with a little extra oomph.


🍌 Overripe Bananas → Pancakes or Muffins

That brown, spotty banana is pure gold for baking. Blend it into pancake batter for natural sweetness, or mash into muffins and quick breads. Overripe bananas also freeze well — just toss them in a bag (but please, remember to remove the peels) for smoothies or, my favourite, Nice cream.


🥦 Broccoli Stalks → Stir-Fry Superstar

Don’t toss the stalks! Peel off the tough outer layer and slice thin. They cook up beautifully in a quick stir-fry with garlic, soy sauce, and a splash of sesame oil. Tender, slightly sweet, and just as nutritious as the florets.


🍞 Stale Bread → Croutons or Breadcrumbs

Before bread goes bad, cube it, toss with olive oil and spices, and bake for homemade croutons. Or blitz it into breadcrumbs to sprinkle on pasta, casseroles, or stuffed veggies for a little extra crunch. Zero waste and full flavor.


🌱 Herb Stems → Pesto or Chimichurri

Parsley or cilantro stems often get discarded, but they’re packed with flavor. Chop them finely into sauces, salsas, or blitz into a pesto with garlic, lemon, and nuts/seeds. You can also freeze the stems until you need them, for a few weeks.. or Zorro recommends feeding them to your pet bunny.


🥔 Potato Peels → Crispy Snacks

If you’re peeling potatoes, don’t waste the skins. Toss them in a little oil, season with salt and paprika, and bake until crispy. They make an addictive (and fiber-rich!) snack.


🍋 Citrus Peels → Zest or Cleaning Hacks

My favourite waste saver? Grate zest from lemon, lime, or orange peels before composting — it adds a bright punch to cakes, dressings, or pasta dishes. Bonus tip: simmer leftover citrus peels in water for a natural kitchen freshener.
I zest all the citrus I buy and then freeze it until I need it. Then I can easily scoop/measure out how much I need for each recipe. A real time saver that allows you to add a flavour wallop, even on the busiest nights. By the way, my absolute favourite tool to zest is this guy. It is quick, efficient and super easy to clean. I used to use cheese graters…let me tell you, there’s no comparison.


🌿Re-Grow From Scraps

Have some space to garden? Some veggies will happily sprout again from scraps:

Potatoes/sweet potatoes: Small eyes or slips can be planted to grow a new crop.

Green onions/chives: Place the white root end in water and watch it regrow.

Celery or romaine lettuce: Set the base in shallow water until new leaves sprout, then transfer to soil. Or, if you buy live lettuce, once you’re done harvesting you can simply plant the lettuce directly into the soil and keep it well watered until the roots take hold. Now you’ll get another harvest in no time! Plus, if they go to seed you can easily collect seeds and re-plant for a future harvest.

Instead of tossing herb stems (like basil or mint), stick them in water until roots appear, then pot them for new plants.

🌍 Gentle Living with Less Waste

Using food scraps doesn’t mean eating “leftovers” in a boring way — it’s about finding little ways to stretch what you have and get creative in the kitchen. Every carrot peel turned into broth or banana baked into pancakes adds up. Small changes like these not only save money but also help cut down on household food waste, one meal at a time.
