Easy One Bowl Vegan Pancakes

Ingredients
Wet Ingredients
- 2 tbsp flaxseed ground
- 6 tbsp water
- 2 cups soy milk
- 2 tbsp apple cider vinegar (or sub lemon juice)
- 2 tbsp canola oil
Dry Ingredients
- 2 tbsp granulated sugar
- 2 cups spelt flour
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
Instructions
- In a large mixing bowl, gently mix the flax and water together. Let sit for 2 minutes.
- Add remaining wet ingredients to bowl and whisk well.
- Sprinkle the dry ingredients over the wet, then gently mix with a spatula, careful not to over blend the batter.
- Pre-heat a griddle or non-stick pan over medium heat and, once warm, pour the pancake batter and cook until bubbly. Flip and repeat for remaining pancakes.
- Serve warm with a drizzle of maple syrup. Enjoy!
