Decadent and simply made with pantry staples, these peanut butter cup pancakes are sure to delight kids and adults alike. A chocolatey base paired with a smooth maple peanut butter glaze gives takes breakfast up a notch- it feels like Reese's for breakfast!
1tbspapple cider vinegaror lemon juice, in a pinch
1cupall purpose flour
¼cupsugar
¼cupcocoa powder
1tbspbaking powder
1tspbaking soda
¾tspsalt
1tspvanilla extract
2tbspcoconut oilmelted *optional, but recommended for best texture
⅓cuppeanut butter*softened (see Notes)
½cupvegan chocolate chipsor more to tase
Maple Peanut Butter Glaze
⅓cupmaple syrup
⅓cuppeanut butter
pinchsalt
Instructions
In a large bowl, combine the soy milk and apple cider vinegar. Let sit to curdle while you prepare the other ingredients.
In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda and salt together until well combined.
Add the vanilla extract, coconut oil (if using) and peanut butter to the bowl with the soy milk mixture. Whisk thoroughly until smooth.
Now, gently stir in the dry ingredients into the bowl with the wet ingredients. Careful not to overmix. Fold in the vegan chocolate chips.
Cook the batter over medium heat on a griddle or skillet, flipping once the edges are set and the batter has firmed up on the bottom. Continue heating the other side until cooked, usually an additional 1-2 minutes.
While the pancakes are cooking, make the Glaze. Simply whisk the peanut butter and maple syrup together until smooth. You can create more or less, as needed,y by following the 50/50 ratio of peanut butter to syrup.
Once the pancakes are done cooking, spread on the Maple Peanut Butter Glaze. Serve warm and enjoy!

A Note on the Peanut Butter I use peanut butter that is simply 100% peanuts and is blended smooth. Using other peanut butters that may contain icing sugar can impact the flavour and sweetness. If you prefer sweeter treats, feel free to use your preferred peanut butter blend. As well, if you use salted peanut butter, you may wish to reduce the salt in the recipe, to taste.If your peanut butter is somewhat solidified where it can't be readily whisked, peanut butter usually softens well in the microwave. Simply scoop some out into a microwave safe dish and microwave until it begins to soften- start with short increments of a few seconds and work your way up, as it doesn't take long to soften.
